Crispy Edamame

As I was coming home from work today I remembered a recipe I saw online for zucchini chips. They were easy to make, just thinly sliced zucchini with parmesan cheese sprinkled on top, baked to crispness. I had my mind set on making this healthy snack when to my dismay, I realized the zucchini I had for who knows how long had rotten (gross, i know).  Plan B was a bit of a gamble....and a complete success.

A 12 oz bag of edamame (that had been in my freezer for months but luckily can't go bad), a little olive oil, and parmesan. BOOM: perfect snack. It's healthy, cheap, quick, and very simple to make.

The parmesan adds just the right amount of flavoring and allows you to lay low on the salt. It nicely crisps over the edamame and makes for a nice crunchy snack or appetizer.

RECIPE

1 (12 ounce) package frozen shelled edamame (green soybeans)

1 tablespoon olive oil
1/4 cup grated Parmesan cheese
salt and pepper to taste


DIRECTIONS


  1. Preheat the oven to 400 degrees F (200 degrees C). Place the edamame into a colander and rinse under cold water to thaw. Drain.
  2. Spread the edamame beans into the bottom of a 9x13 inch baking dish. Drizzle with olive oil. Sprinkle cheese over the top and season with salt and pepper.
  3. Bake in the preheated oven until the cheese is crispy and golden, about 15 minutes.
